Cowboy Coffee isn’t just a business—it’s a labor of love, a gathering place, and a little piece of the West right here in San Diego.

Founded in 2025 by Audra and Chris Burgio, Cowboy Coffee was born from a simple belief: good coffee, good people, and a strong community are what make life worth living. Born and raised in San Diego, Audra has always had a heart for her neighbors and a knack for bringing folks together. From running the annual Halloween pumpkin patch—complete with games and bounce houses that light up kids’ faces every October—to opening Burgio Feed and Supply, she’s built her life around serving the community she loves.

When the building connected to the feed store became available, Audra saw an opportunity to create something special. Not just a place to grab your morning cup, but a destination where the spirit of the frontier meets everyday life. Cowboy Coffee was born—a coffee shop and western wear apparel store where you can fuel up with bold, honest brews and gear up with quality Western goods, all under one roof.

Brewing Guide: Get the Most Out of Your Beans. Good coffee deserves a good brew.

Here's how to make every cup count.

The Basics: What You Need to Know

Start with Fresh Beans Coffee is best within 2-4 weeks of roasting. Store your beans in an airtight container in a cool, dark place—not the fridge or freezer. Moisture is the enemy. Grind Fresh, Brew Fresh Pre-ground coffee loses flavor fast. Invest in a burr grinder and grind right before brewing. Your taste buds will thank you. Water Matters Use filtered water if possible. Coffee is 98% water, so if your water tastes off, your coffee will too. Aim for water temperature between 195°F-205°F (just off the boil). The Golden Ratio Start with 1:15 to 1:17 (coffee to water). That's roughly: 1 tablespoon of coffee per 6 oz of water 2 tablespoons per 12 oz (standard mug) Adjust to taste—cowboys like it strong, but you do you.
